Look Out Aunt Jemima…

Look Out Aunt Jemima…

So from my kitchen to yours (and by my kitchen I mean my mother’s kitchen [and by that I mean from the pages of her Better Homes and Garden New Cookbook]), here is a fabulous pancake recipe that will leave even Aunt Jemima wanting more (plus some extra comments from me):

Prep time about 10 min.
1 cup all- purpose flour (mother always uses unbleached)
1/2 to 1 teaspoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg beaten
1 cup milk-scanty
2 Tablespoons cooking oil-preferably Canola (mother always said it’s the healthiest)
1/2 teaspoon of vanilla (creative mind of my mother)

1. In a medium mixing bowl stir dry ingredients together.
2. Mix and stir till mixed.
3. Add liquid to dry all at once and stir till blended…try not to mix to
long (Better Homes and Garden said lumps are okay…Uncle Lumpy might agree with that, but mother prefers no lumps….sorry Uncle Lumpy)
4. Let rest while the griddle/pan becomes Hot… batter should start to
become light and airy looking .
5. When griddle is ready…pour about 1/4 cup onto a lightly grease
griddle (I always enjoy expanding my creativity and making shapes with the batter)
Variations…buttermilk pancakes: prepare as above, but reduce baking powder
to 1 teaspoon and add 1/4 teaspoon of baking soda to dry mixture, substitute
buttermilk or sour milk for milk.
Don’t forget the great fruit that can be added while it cooks…blueberries,
strawberries, chocolate chips, bananas.

Question: Dear Uncle, Why are you Lumpy?

Answer: Hm… why am I lumpy? Well first we should ask, am I lumpy? Just because my name is Uncle Lumpy does not necessarily mean I have lumps now does it? Things are not always as they seem. Vegetable oil has the word vegetable in its name, but is it the healthiest for you? Surely Canola oil is far better for you. When you hit your funny bone, do you laugh or start telling jokes? Not so my dear. So once again we must remember, things are not always as they seem.
